To change a model's wardrobe, you will need to access the INVENTORY Sheet. Look over to the right of the the «PROPERTES» tab and you will see Preview and inventory.
«PREVIEW» will show you a 3D (spin-around) virtual model of the currently selected object (in our case, Frans Guberos).
The «INVENTORY» tab will allow you to change out the possessions of the NPC. This include both the inventory it carries (in pocket/bag) and on its body (for some creature, this may even include "lootable" fur, teeth, and claws -- which serve as craft materials).
Since armor and sword is too “unbecoming" for our tavern master. We will give him some commoner's clothing.
In the dialog box that opens up, look to the left-hand bottom corner (the "ITEMS" Panel), and click on the [+] sign in front of the "Armor", and then choose "Clothing" » "Plain Shirt". (Notice there are several choices for "Plain Shirt", depending on the class of your NPC. Pick one that you like. (The one I picked is: "joeswizardshirt".)
Drag and drop the "Plain Shirt" item over the "Scale Mail" Item in the right-hand panel.
Once you dropped the "Plain Shirt" into position, you would notice that the "Scale Mail" had been displaced from the right panel to the left panel.
In fact, the right panel is what's the NPC is wearing at the moment, i.e. the Equipment tab. The left panel is what's in the NPC's inventory (pocket, so to speak), hence the Inventory tab.
It is your choice whether you want the Scale Mail to remain in Frans' inventory or not. I would remove it, as there is really no reason why a tavern master would keep a suit of Scale Mail in his "pocket" at all! Since he is a tavern master, I decided to give him a pair of leather boot.
As for other equipment currently worn by Frans (i.e. Longsword, Heavy Shield, and Arrow), you can simply click on the item, then drag and drop each one outside the dialog box to eliminate them.
